    here's a lil something I whipped up tonight. Chicken stuffed with mozzarella, red peppers, red onion, pepperoni, topped with a lil butter, parmesan, oregano, parsley.

    pound out your chicken flat, sautee the veggies and pepperonis together, lay some mozzarella down on the chicken, put the sautee mix, a lil more cheese, fold it over, top w a brush of melted better, grated parmesan, and oregano/parsley. I'd throw mushrooms in too but we never have em cuz my wife don't eat em, would be bomb with a lil marinara on top as well.

    bake at 420, enjoy. Gotta flip em in the middle of baking.

    I made some bomb lasagna fritta, tryna copy olive garden since thats like my favorite thing there.

    boil up the lasagna, let it cool off, mix ricotta (I used all of a 15 oz package, made 12 but id probably only make like 8-10 next time with same amount) one egg and Italian seasoning in a little bowl, lay out the lasagnas and cut them in half so you have like two 4-6 inch strips per lasagna noodle, so 4 noodles will make 8 lasagna frittas. Spread the ricotta mix, fold into thirds make it pretty tight and let em sit in the fridge for at least an hour and a half. Mix a few eggs and a little milk in a bowl and you'll also need a bowl of italian bread crumbs, dip the folded lasagna in egg mix then bread crumbs. Fry em in a pan. With about an inch of oil for a couple minutes on both sides, or till golden brown. At first I tried deep frying em, cuz I made chicken parmigiana too, but it worked much better in a lil pan with shallow oil.

    after fried put it standing up in Alfredo on a pan with marinara drizzled on it, I sprinkled parmesan on top too. Bomb.
