Any kind of Southern Louisiana food but my favorite every day food is jambalaya.

Chicken and sausage, ham and sausage, shrimp and sausage. This is a recipe from my first book called Hot sausage Jambalaya.

    Hot sausage Jambalaya

    1 lb hot bulk sausage
    1 lb pepperoni chopped
Big 6 vegetables chopped- 2 onions, 1 bell pepper, 3 celery ribs, 2 cloves garlic, 1 carrot, 1 jalapeno
1 tbsp Tony Chachere's Creole seasoning
    2 tbsp Worcestershire
    1 tsp hot sauce
    1 can tomato soup
    1 28oz can diced tomatoes

    4 cups of cooked rice
    4 Hot Italian sausage links
    4 jalapenos(for garnish)

Break up and brown hot sausage. Add vegetables & pepperoni. Simmer together until vegetables soften and pepperoni begins sweating.
Add the spices, Worcestershire, tomato soup and tomatoes and simmer for 30-45 minutes uncovered.
Grill Hot Italian sausages until done inside and crisp outside.
Assemble by mixing half of sauce with rice. Plate the rice mixture followed by Italian sausage link on top and then smother with remaining sauce. …serves 4
Garnish with a grilled jalapeno on each plate

Just the mention of Mr. Chachere's seasoning makes the mouth water.

This is one of my favorites that I make. Bit of a Cuban/Gulf combo..
Chicken tenderloins soaked overnight in a beer, garlic and black and red pepper.
Seared to a dark crisp finish on a red-hot skillet then smothered in white onions and drowned in Frank's Red Hot and fresh squeezed lime juice. A little Tony C for good measure. Served with black beans and rice..

I can make some pretty good reservations.

Seriously-I like to cook. The best out of the main stream I can make is tabouli (tabouleh). I usually pair it with lamb and/or rolled grape leaves.

No, I'm not Lebanese or greek.
