    Everyone has some weird concoction they make. Be it a different take on a PBJ sandwiches, BBQ "secrets" or a full blown gourmet delicacy.. Post your "recipe".
    The most outlandish submission gets some kinda made-up award...

    I love Louisiana cooking, but not blackened. That's not real, just something invented by Paul Prudhome. When cajuns cook anything blackened, they call it what it really is, BURNT, and feed it to the dogs.

    I love gumbo. Snug Harbour in the Marigony district had the best, last time I was there.
    I love e'touffe, shrimp remoulade, jambalaya, boudin, and everything else. I love it all.
    Damn I can't wait till September and being back down there. I'm getting hungry...

    It quite funny. When the first North wind blows after the long hot summer, everyone gets out their Gumbo pots. I swear you could go outside and smell it in the air.:ha:

    Louisiana is divided up into basically 3 parts. In New Orleans they cook very creole, from south central to southwest louisiana they cook more cajun and north louisiana i would say is more country.

    I like the dark brown roux. I went to the New Orleans School of Cooking, and learned a lot of the history of food in Louisiana. I can reproduce a good gumbo, and a few other dishes.

    Whether KPaul invented it or not I likes me some.. I have a seasoned skillet awaiting the hi-heat for whenever a yearning overtakes me..
