    Hamburger is best if it can cook in its own fat, professionally trained chefs will agree. On the grill all the juices is lost because theres nothing to catch it. Ive made a lot of dried up burgers in my day before figuring this out. If I can help it I always cook burgers on a flat surface.

    Get it RED HOT then smash your meat ball on it. Flip once..

    Thats the winning way i do them. take a handful of meat, make a ball, sit it on the flat top then smash it down, wait a few minutes and flip. best burgers Ive ever had

    Because it was learn. That is not what they put in in most restaurant and store bought burgers.

    Some friends and I found an old 19th century meat grinder and set off to make the best burgers in the wold. Got some sirloin steak, cut into strips and ground it down. Mixed in egg, blue cheese, jalapeno and some spices. Cooked medium rare and they were amazing.

    Me, personally... I'd rather just have the steak.
    Save the lower grade stuff for grinding up into indistinguishable patties. Some of the best burgers I've had were made from normal store bought ground beef, and some bad burgers I've had were made from the fancier meats.

    If I'm going to eat 10 dollars worth of beef, I'd rather do it as steak than as a burger, just IMO.

    Burgers are where you put the meat that isn't show-worthy.


    One of the best burgers I've ever had was a regular grade wal-mart meat burger, store bought precooked bacon, and kraft slices.
    A friend of mine cooked it.. and he is just a master.
